Ingredients:
1 cup peanut butter (no sugar added brand)
4 tablespoons Stevia
2 Tablespoons of Whole Husk Psyllium (water soluble fiber)
1 egg
Directions:
Preheat the oven to 325 °F (150 °C).
Line a baking sheet with parchment paper.
Combine ingredients in a medium bowl.
Stir with a spoon until stiff dough forms.
Take walnut-sized pieces from the dough and form then into balls.
Place the balls onto the parchment-lined baking sheet.
Flatten the balls with your fingertips.
Bake in the preheated oven for 8-12 minutes or until the cookies have got some color.
Don't overbake!
Let cool completely (important!)
Then remove from the baking sheet.
Store in an airtight container in a cool and dry place.
