Peanut Butter Cookies Recipe

Ingredients:

1 cup peanut butter (no sugar added brand)

4 tablespoons Stevia

2 Tablespoons of Whole Husk Psyllium (water soluble fiber)

1 egg


Directions:

  1. Preheat the oven to 325 °F (150 °C).

  2. Line a baking sheet with parchment paper.

  3. Combine ingredients in a medium bowl.

  4. Stir with a spoon until stiff dough forms.

  5. Take walnut-sized pieces from the dough and form then into balls.

  6. Place the balls onto the parchment-lined baking sheet.

  7. Flatten the balls with your fingertips.

  8. Bake in the preheated oven for 8-12 minutes or until the cookies have got some color.

  9. Don't overbake!

  10. Let cool completely (important!)

  11. Then remove from the baking sheet.

  12. Store in an airtight container in a cool and dry place.
